Sometimes, my husband and I enjoy having brunch during the week at home instead of a typical Menu del Día as we live in The Madrid Capital.
Eggs Benedict is quite versatile and can be prepared with either Smoked Salmon or Bacon or Ham. Eggs Florentine is quite a healthy alternative and French toast is always quite endearing.

We had Brunch out today at Bibo, one of our favourite bar restuarants ..
I had Eggs Benedict with Smoked Salmon and my husband had Eggs Benedict with Iberian Ham ..
Always delicious and a truly lovely experience.

Today is my remote work day .. So, I have the time to prepare lunch !!
Pasta con prawns, tomatoes and Herbes de Maquis which are Provençal herbs: basil, thyme, oregano, rosemary and savoury.
I am using gorgeous red vine tomatoes, prawns, extra virgin olive oil, 1 onion, 2 garlic cloves, a tablsp of red wine vinegar, basil, mint leaf, oregano, thyme, rosemary and savoury, a 1/8 tsp of cayenne pepper and whipping cream ..
This aromatic Corsican dish is amazing and quite easy to prepare.
Will pair with a baguette, and a light salad of assorted lettuces: kress, arugula, radicchio and baby spinach leaves and cherry tomatoes. A drizzle of Evoo (extra virgin olive oil) and a drizzle of Balsamic vinegar and a few crotons ..

Today I am putting a spinach Lasagne in the oven. Prepared the various parts of the recipe last night ..
For the Besciamella ( Bechamel ): Unsalted butter, all purpose flour, whole milk, salt and grated nutmeg.
Refined and gorgeous, it is flecked with spinach and a silky layer of Besciamella.

Instead of a starter, we shall have a lite dessert of Fresh berries and Italian Burrata.
Wine: A Prosecco Rose.
Wednesday: 22 / 05 / 2024 ..
Today lunch was:
Baked sea bass with fresh mushrooms, courgette / zucchine, fresh basil, red ripe tomatoes, extra virgin olive oil and prepared in a heavy large skillet with salt and freshly ground peppercorns and sautéed until cooked through.
Turned out lovely ..
Served with a minimalist Caesar Salad without chicken and with lovely little crotons ..
Wine: A pleasantry from Navarra, Julian Chivite - Rosé ..
Thursday: 23 / 05 / 2024 ..
My husband and I went out for Chinese cuisine today as both of us had alot of professional projects to finish by next week, so we are quite busy.
We had:
Assorted Dim Sim ..
Fideos (tiny noodles) with assorted veggies ..
Bok Choi sautéed ..
Our main was: Peking Duck with crepes ..
And we skipped dessert and we were on full side.

Today, we are going to have Salmon Teriyaki at home served with a simple salad.
The wine was a simple Rose Prosecco ..
Dessert shall be Fresh blueberries with Greek Yogurt ..

Sunday: 26 / 05 / 2024 ..
My husband and I went out for Brunch today.
We truly enjoyed the lovely weather ( 23 degrees centig.)
We shared an array of lovely pastries including a Bûche (rectangular pastry) Charlotte of citron vert (lime) and rasberries ..
Then my husband had Crêpes with fresh strawberries and I had my usual Smoked Salmon - Eggs Benedict ..
We had a glass of Cava included with the brunch and then after brunch, Espresso .. And a bottle of Perrier, Sparkling Water.
We walked home and enjoyed the crisp early morning and mid day.
Tuesday: 28th May 2024 ..
Today, I prepared a Baked aubergine with tomato sauce from scratch and Reggiano Parmigiano Cheese (Parmesan). This recipe hails from Lecce, Puglia and is called
MELANZANIE DI LECCE.
It is similar to a lasagne except it is not prepared with Pasta. The layers are aubergine.
Served with a tiny tri color leaf salad, cherry tomatoes and a lite vinegarette.
Shall be ready for 14.00 our time in Madrid and for dessert, assorted fruits.
Wine: Prosecco Rosé.

Today, we ventured to a local neighbourhood terrace bar and restaurant, as the tables all had sun umbrellas so it was quite comfortable.
Lunch:
Tender, melt in one´s mouth Galician Baby Octopus served on a wooden board with Extra virgin olive oil, smoked paprika and boiled tender cachellos ( yellow potato from Galicia) and sprinkled with sea salt ..
An Albariño White Wine from Martin Codax - O´Rosal.
Perfect lunch ..

Saturday ( the 1st of June ):
Today, my husband and I, went out for Napoletano Style Italian Pizza at Fratelli Brothers, who won the best pizza award outside of Italy in 2021.
The Margherita is a gem of a pizza. Truly delicious.

Remote work day so time to prepare lunch for the two of us.
1st course: An artful Antipasto salad .. and homemade Vinaigrette ..
Main course: Grilled whole fish - Gilt bream called "Dorada" in Spain, a lovely blue fish .. with fresh parsley chopped finely, Extra virgin olive oil, fresh thyme, fresh coarse breadcrumbs and egg for the breading.
Dessert: Fresh seasonal fruits: Strawberries, cherries, red apple and 3 different cheeses, a Spanish, a French and an Italian .. 1 Goat cheese, 1 cow cheese and 1 sheep cheese.
Also served with a bakery bread .. we enjoy dipping in a little Extra virgin olive oil sprinkled with salt.

A warm endive salad with fresh lemon, endive, Extra virgin olive oil, white cap mushrooms, fresh parsley and shredded carrot .. Salt and black pepper ground ..
The main was a golden braised chicken with rosemary sprigs and garlic, dry white wine, tomato paste, chicken stock strained and placed in my Le Creuset Dutch Oven over medium heat.
Turned out lovely.

A nicely balanced salmon with a tropical fruit salsa, grilled.
Mango
A small Papaya
A tiny bit of red onion
Fresh squeezed orange juice
A little of fresh spearmint herb
White pepper
Paprika ( pimentón )
Thyme Herb
Salt To Taste
Heat skillet with 3 tablespoons of Extra virgin olive oil and grill salmon on high heat - 2 minutes per side. The herbs and spices shall create a crust.
Serve the fruit salsa on side or drizzle lightly on the salmon ..
Sip with a Sparkling rose or white wine.
Saturday: 08 / 06 / 2024 ..
Lunch today was:
Starter: Fennel soup prepared with leek, red potato, fennel bulbs, crème fraiche and orange zest grated.
Main: Roasted chicken with Dijon sauce was the main course.
Served with Haricot French style green beans.
Dessert:
Quick fresh strawberry charlotte ..
Earl Grey / Café Espresso.
Wine today: Pouilly Fuissè Chardonnay.

Our lunch today is Risotto Primavera with artichokes, lemon, chicken stock, Extra virgin olive oil, celery, leek, carnaroli rice, green beans, tomatoes peeled and de-seeded, carrot, fresh green asparagus, unsalted Asturian butter, fresh ground pepper, salt and freshly grated Parmesan.
Serving with: A Rosé from Navarra - Julian Chivite ..
Dessert: Zabaglione with Vin Santo
This is a simple egg yolk preparation with sugar to taste and a 1/3 cup of Marsala Wine or Vin Santo (sweet wine of choice). Served warm into goblets with biscotti.
