This is from when I could cook fresh everyday day.
Poor man's cassoulet
3 thick Toulouse sausages or what you like
Tin haricot beans drained
Tin chopped tomatoes
Onion sliced
Oil teaspoon
About half oz breadcrumbs. I used brought ones but you can make your own.
1 chicken Oxo.
Oven 180°
Cook sausage in half teaspoon oil until brown add other half teaspoon of oil add onion coon until soft.
Cut each sausage into 4.
In a dish layer half the beans ,then half toms add all sausages and onion . Put on rest of the beans and then the toms. Cover with chicken stock .
Cover with non stick paper and foil stand on tray covered in foil incase it bubbles over.
Cook for hour.
Uncover if it's dry add bit more stock and cover with breadcrumbs pressing them down .
Cook for 20 minutes until browned and breadcrumbs absorbed some of the stock.
I used to make it do for 2 dinners.
Can be made using vegetarian sausages and vegetable stock.
