LucyAnna just had a muffin they are really light and delicious. Thank I can make muffins that aren't like rubber balls.

I’ve just made Whiff’s gingerbread- it’s delicious! We’ve had it straight out of the tin, so should be even better tomorrow.

MandL glad you like it. Made one today for my craft group party on Thursday. Tomorrow making millionaire shortbread as it needs to set before I put on the chocolate on Tuesday. Then it's making cheese rocks and sweet potato and mango chutney samasoes.

Redhead I will be making them tomorrow and bake on Wednesday. All I use filo pastry. And I have to steam bake the sweet potatoes because I can't peel them raw .I just put some into a bowl and mix with my mango chutney until I like the taste. I will take pics tomorrow as I do them just to show the size I tend to make. I Bake them in the oven . They freeze well . My craft group went mad over them last year so need to make more this year as they pulled names out of a bag who could have what to take home. Also more of my cheese rocks. My gingerbread I cut into 16 and the millionaire shortbread will cut into 16.
Keepcalmandcavachon the brownies are even better the day after you make them and warmed in the microwave . Lindor and brownies together heavenly especially with a good quality vanilla ice cream.
Redhead hope this does seem patronising by posting the pics or a case of teaching your mother to suck eggs.
I cook my sweet potato in a lined roasting with foil prick them a few times add some water and cover with foil tightly. Then I cook the for a hour at 200° while my dinner is reheating and leave them in the oven for half to a hour depends when I remember to take them out . I put them into a bowl and leave over night in the fridge once cold. Next top and tail and the peel comes of easily. I cook butternut squash the same way. I can't peel them from fresh and found this way is easier for me .
I used 3 sweet potatoes and mixed in mango chutney until I like the taste. I always make more mix than I need it freezes well but I used the left over to make a topping for tonight's reheated stew.
I have used 2 packets of fresh filo pastry each pack had 7 sheets so I cut then in halves horizontally then fold into 3 length wise. Brushed with melted spread and put a teaspoon of the mix into the corner and folded it over to make triangles. Then put onto a tray lined with baking paper that has been brushed with un melted spread and them covered with cling film and out into the fridge until tomorrow. Before baking I will brush the tops with rape seed oil. And bake until golden brown 15-20 mins . Oven temp is on the packet. I measured one it was 5x3x3 cms but they weren't all the same size. I do tasty not pretty.
I made my cheese rock mix and it's in the fridge to cook tomorrow morning.
I have my pneumonia jab in the afternoon and don't know how I will feel so all the work will be do and will just need to wrap everything ready for craft party on Thursday. I put the melted chocolate on my MS today .
Hope this makes sense. I now realise why cook books are so winded . It's trying to remember what you do instead of just winging it.
Rest . Make sure the seam in on the bottom.

I don't know if this will work with gluten free flour as I have never cooked with it before. But I have brought gluten free baking powder. Have a gluten free cook book and will have a go next week to make something . Will let you know how I get on..
I never use gluten free flour. I use groun almonds instead and add baking powder at 1 evel teaspoon to every 6 ozs ground almonds. Makes lovely light cakes

I made your cheese rocks and I twice baked them to make them crispy really like them thanks.
Whiff have you posted the cheese rocks recipe ..have I missed it? I rather fancy those being a cheese addict! 🙂
Cheese rocks
200g P flour
150g mature or extra mature cheddar grated.
150g spread I use olive spread for baking as I find it gives a lighter texture. Don't use butter as with the cheese it would be waste of money these are cheesy.
1 med egg
Oven 200° fan
You are supposed to rub fat into the flour . I can't do that.
So I grate the cheese in the bowl add rest of ingredients and mix until everything comes to together into a ball.
Cover put into the fridge for 30 mins or over night.
You are supposed to divide into 3 roll to cylinder and cut pieces off.
I can't do that so just spoon rough dessert spoon mixture on 2 trays lined with baking paper.
Bake 15-20 until brown.
Freezes well and as someone doubled baked them.
I love people making the recipes there own it's how it should be.
Annapops when I make them with my grandson he rolls out and cuts out. It's wonderful to bake with grandchildren. Glad you liked them .

This the third time I tried writing . School error didn't get the millionaire shortbread out of the fridge hour before cutting . So some pieces have cracked tops. Used dark brown sugar in my gingerbread this time. Added a depth of flavour to the mix. Everything packed as I don't know how I will be after my pneumonia jab this afternoon.
