When you finish renovating your house, which I eagerly wait for news, I shall try to buy you something similar grin

I hope you got a new processor for a wedding present smile

The year we got married there was a icing sugar shortage, so as I had received a food processor for an engagement present and the lady who was making our wedding cake needed icing sugar I set about breaking down granulated sugar to icing sugar, and burnt out my new processor before I was even married. Dont know how she managed it but the cake was fabulous all 4 tiers. smile

You can get away with using granulated mixed with castor, if you have a processor whiz the granulated. You can always use the icing sugar up at Christmas making peppermint creams

Jeanie use exactly the amount of Splenda recommended in the recipe. I didn't, and my Victoria sponge was inedible. Good luck grin

I am preparing to do the Christmas baking and find I have 2 boxes of icing sugar which I will never use and little caster sugar.

Can I use icing sugar in place of caster sugar in baking a cake.

Also as anyone used Splenda ( I have a box of this) in place of caster sugar and could give me some advice.

Many thanks
