The answer to your question Nfk dumplings, is that one of the first British printers when printing was the newest technology was a Yorkshire man and he spelled as he spoke.

I walked past a nice shop with the word 'professional ' being beautifully painted by hand by a sign writer. When i realised he was spelling it with two fs and one s I pointed it out. Sorry but this was his job, no excuses imo .
