What did you eat today?

I know there have been threads like this previously but it's something to do to take our minds off the virus.

I had raw overnight-soaked oats with blueberries, raspberries and banana with greek yoghurt for breakfast plus 2 mugs of tea.

Morning latte OH always makes for us

Another cup of tea.

Bowl of Thai pumpkin soup and piece of savoury toast. (very popular in Australia other places may not know what it is) plus another mug of tea.

Probably salad for tea with tomatoes, avocado, onion, cucumber, lettuce plus a veggie fritter made with grated zucchini and carrot, spring onion, chilli flakes,feta and cheddar cheese, eggs and a bit of flour.

This makes 6-8 and I have a couple a day till there are all gone.I don't get tired of having the same things for a few days.

OH has different food as he is a traditional old style eater with sausages and mash, silverside (corned beef) baked beans egg and bacon etc.

I always have some chocolate in the evening . (smile)

Trying to conserve freezer full of potential meals. Last night we had a lovely beef stew with dumplings from said store!

I have rediscovered my soup maker and made soup today with some slightly stale bread which was still ok (with marmite). Tonight we had a delivery of fish and chips from our local pub which is otherwise shut for the duration.

As I work for the NHS I hope to get some stuff in the early slot at Sainsbury on Monday. Keep safe everyone.

Left over homemade veg soup with the last of the home baked bread.
Grandsons leftover pasta with homemade veggie bolognaise.
Spicy lentil soup for dinner. Cheese and crackers.

Home made steak pie with mash and steam fried cabbage and bacon ,OH had apple sponge straight out of the oven with ice cream so I can expect him to be searching for Rennies when the indigestion strikes any time now
I might need to go for some shopping in the morning ,last shop here was 12th of March

We still have a few overwintered leeks in the garden so lunch was leek and potato soup with toasted cheese on whole meal bread.
Dinner was salmon and veg curry with brown rice and pud was a slice (well 2slices) of the banana cake I made yesterday to make use of a couple of blackened, over ripe bananas. No leftovers whatsoever!

I broke from my usual low-carbs and had bacon and tomato with a slice of fried bread for my breakfast.

I made the bread yesterday as I've been unable to get Paleo bread for the past 4 weeks. Yes, I am wheat intolerant but if I keep to very small portions and take my digestive enzymes, I'll survive. smile

Fortunately, I had the yeast and flour in already and quite enjoyed kneading the dough last night - took me back to when I used to made all our bread.

Lunch will be coleslaw (freshly made) and a bit of Red Leicester. You won't believe what I have to pay for English cheese here, so I make it last.

We gave in and after a light lunch had a hot cross bun each, hot and buttered I broke my own rule of waiting until Good Friday.

Yesterday's evening meal was burger and chips with salad (home grown first picking of early salad leaves and rocket, tomatoes, cucumber and dressing). There were no burger buns in the supermarket when I visited for the first time in a couple of weeks so I decided to make my own with some bread flour that I had in the cupboard from before the virus. I looked up the recipe for soft burger buns which said that, before baking, brush with melted butter and scatter sesame seeds. Followed the instructions, but when baked and taken from the oven all the seeds fell off and scattered in all directions. I've swept the kitchen several times but still finding blasted sesame seeds in all sorts of nooks and crannies! Oh, well...........

Breakfast - 2 Nutibix and quite a lot of lactose-free milk because they seem to absorb such a lot.

Gluten-free oat and syrup biscuit with decaf coffee and lactose-free milk

Lunch - Sandwich. 2 slices Gluten-free bread, lactose-free spread, lactose-free brie topped with bacon.

Dinner - Roast chicken (some will be cooled and frozen, carcass to make stock) Roast carrots, parsnips and potatoes. Gravy made with fodmap-friendly gravy powder. Fodmap-friendly Yorkshires. (Cooked lots so some to freeze).

Lots of cups of tea during the day. I may be a teaaholic.

Lunch bowl of thick soup and toasted ham cheese and relish sandwich.

Dinner Caesar salad.

Later maybe an orange and as always some chocolate!

Ginger tea and a poached egg for breakfast. No lunch. Small bit of corned beef, steamed cabbage and roasted carrots with a bit of garlic for dinner.

Sometimes I skip breakfast and merge it into lunch. So breakfast was 3 coffees and an apple. I've decided to start on the stockpiled beans, not accumulated of late but over a period of time, because a) in the back of my mind I thought if we ever get stuck indoors we'll be alright if we have beans, a situation that's now come to fruition and b) Impromptu visits from the grandchildren, often they would come in and straightaway say "can we have beans on toast".

So I've had 1 slice of toast and beans and then talking of the grandchildren I found the Nutella, which I buy for them, but of late discovered how delicious it is, I steadfastly refused to buy it for my children thinking it was unhealthy, but pretty much cave into the grandchildren's demands, most of the time. Had another slice of toast covered with that and a banana, all washed down with a cup of tea. Probably going out for a stroll to walk it off soon.

Half a panini fried in olive oil and topped with ketchup and a fried egg. Mug of tea mostly Oatly.

Elevenses: glass of hot water and fried half panini spread with Marmite.

I shall make carrot, rice, and onion soup later on, and follow that with saute potatoes and Marmite with mock bacon. English apple.

Breakfast was a cup of tea and an apple.

Lunch today was grilled bacon and tomatoes with mushrooms from Monday's veg box.

Dinner will be a jacket potato with the remains of yesterday's bolognaise sauce.

My date and walnut loaf cake from yesterday ended up rather dry as I'd substituted some of the gf flour for self raising but it's fine with some butter on it!
