Just had a chicken, bacon and mushroom steamed suet pudding, made from leftover roast chicken. Done in slow cooker, was lovely.

The rest of the chicken will be used for chicken supreme tomorrow, with rice or pasta.

Carbonara, garlic bread and salad

Tonight Riverwalk, we will mainly be eating duck legs, sauté potatoes and green beans. Slightly disappointed as I thought it was duck breasts.

My OH has outdone himself! He has put goodness knows what in a Pyrex dish with a layer of mashed potato on top! I am wondering if attending boarding school does permanent damage to the taste buds.

We had roast lamb, mashed and roast potatoes, leeks and cabbage in cheese sauce, carrots and peas with red wine gravy
No pudding required after that...

We've had tofu and mushroom stroganoff with rice.
It was bl***dy awful. I cooked it from scratch. I need to try harder confused

Dinner was roast gammon (from the freezer, pre-lockdown), cauliflower cheese (homemade, cauliflower bought and home-frozen when Tesco were selling them for 39p, cheese pre-lockdown, milk this week's, cornflour from store cupboard, salt and pepper aeons old!)
Potatoes, bought pre lockdown from village shop.

I used up cooked potatoes from yesterday to make an onion, cheese and potato pie. Not bad for a left-over job.

GS had sweet potato chips (home made - FINALLY worked out how to get them crispy), grapes and a Magnum (a friend socially distanced/dropped it off for him as a treat). He didn't know what to do with himself with the pleasure of it, although didn't actually want the ice cream, just the chocolate!

Nannylovesshopping Sun 26-Apr-20 21:44:58

GagaJo please will you share how to get sweet potato chips crispy, many thanks

Callistemon Sun 26-Apr-20 22:02:19

How did you get them crispy?

All hints appreciated.

GagaJo Sun 26-Apr-20 22:31:09

Nothing stupendous, just kept the oil on lowish and cooked them slowly. Not too thick.

Callistemon Sun 26-Apr-20 22:34:36

Perhaps I do mine too quickly, they always end up rather soft.
DH doesn't like them, he likes oven chips! So I tend to do mine for the same time.

Callistemon Sun 26-Apr-20 22:36:45

Oh, did you deep fry?

I do mine in the oven. Cut into chips, coat with oil and then oven bake.
I think frying in oil would be better though.

GagaJo Sun 26-Apr-20 22:44:55

Cooked them in an inch of oil. Just enough to cover them. It was only one sweet potato. I’m not a fan but he enjoyed them.

H1954
Fish fingers, Mash and Peas brings back memories of coming home from school! One of my favourites, must have tomato sauce tho. Might have to make this tomorrow.

Tonight it's cottage pie with mushrooms and sweet pepper added topped with cheesy mash and frozen mix veg.

Chilli tonight for us.

Based on the meagre contents of the fridge, salmon fillet, yoghurt, mushrooms, & frozen spinach I'm making something along the lines of this recipe:

Spain on a fork

Happygirl79 Mon 27-Apr-20 11:27:22

Bubble and squeak (using up leftover vegetables from Sunday lunch) with slices from oven baked Gammon and baked beans

Witzend Mon 27-Apr-20 12:37:31

We’ve had rather a lot of meat lately (don’t usually have very much) so tonight it’s going to be a what-have-I-got? vegetable something or other with rice.
I have half an enormous onion, half a very big courgette, both chopped up, some garlic, and a chopped large squashy tomato cooking v gently on the hob.
Later will add a can of spicy chilli beans (haven’t used them before) and see what else it needs - maybe hot chilli powder or curry powder, though probably chilli. And probably a stock cube.
Luckily my dh will always eat whatever I provide and usually make appreciative noises - fingers Xed for this.

Rosalyn69 Mon 27-Apr-20 13:25:01

My husband eats anything I cook too. Sausages tonight with carrot and coriander mash. Then lemon yoghurt with passion fruit.

Riverwalk Mon 27-Apr-20 20:31:51

My version wasn't quite as pretty as the professional's above - I blame the lighting!

It was very tasty but the sauce was a bit thick - I had one portion and the other is in the freezer.
