We love beetroot. My favourite recipe is Beetroot and butternut squash warm salad. I cube both vegetables and toss them in oil, garlic, salt and freshly ground black pepper. Toss the squash first then the beetroot and place on a baking tray covered in foil. I raise a little wall of foil in the middle so the veg are kept apart. Roast in a medium oven. Baby plum tomatoes and small onions can be added to add more colour and flavour.
I serve it warm with green salad, feta cheese and garlic bread.
Delicious.
