What is for brunch or lunch ?

28 / 11. Tuesday.

Sometimes, my husband and I enjoy having brunch during the week at home instead of a typical Menu del Día as we live in The Madrid Capital.
Eggs Benedict is quite versatile and can be prepared with either Smoked Salmon or Bacon or Ham. Eggs Florentine is quite a healthy alternative and French toast is always quite endearing.

Oven 200 degrees Centig.

Grease a sheet, and oven bake approx 6 minutes per side.

Frenchgalinspain said she is unable to take photos at the moment, petra, so presumably posts stock images from the recipes she has made.

I must say when I tried to make Chicken Kiev it looked like an unfortunate explosion and the filling ended up outside rather than in the Kiev.
So no photos from me 😁

The chicken kiev is a fantastic recipe.

I had done culinary courses over the years at Le Cordon Bleu and some of the fotos are mine and some are my course books which contain numerous photos I took many years ago.

I used the recipe of the Strawberries when my 2 daughters were visiting with my grandchildren. I made them. The photo is not mine.

I shall no longer be posting any photographs until I get my new mobile next month. I dropped my mobile on hard surface and cracked the entire screen and it does not function. I am using my desk and laptop.

16 / 01. Tuesday Lunch.

A very Spanish lunch today:

Pisto Manchego, which is a vegetable dish consisting of Spring onion or scallions, green and red bell pepper, courgette or zucchine, red tomatoes, Extra virgin olive oil, salt, parsley (fresh), garlic and topped with either hard boiled eggs or poached.

The main was: Fresh oven baked Cod Fish on a bed of potato, tomato and sprinkled with fresh herbs and s & p and a drizzle of 100% Hojiblanca Extra virgin olive oil and prepared with a drizzle of white wine.

Very simple .. Bread (baguette) from bakery and a glass of white wine from Galicia (an Albariño 100% grape variety) called Pazo Señorans from Cambados, Galicia.

Another lady asked me the same question.

I gave the ingredients for the pastry shell that I use and the interior products and amounts ..

Do not remember the exact date but it was recent, either last week or over weekend that just passed.

I work, and I just have so many hours in a day and I am busy starting my Spring Magazine plus have articles to cover at the 2 Trade fairs coming up ..

If i recall, the lady´s 1st name begins with the letter "P" .. Petra perhaps.

17 / 01 / 2024 ..
Wednesday.

Today Poached Cod with white wine and tomatoes.
Simply Extra virgin olive oil 100% Hojiblanca, some leek or shallots, 3 garlic cloves finely slithered, fresh La Rioja red ripe tomatoes de-seeded and peeled and a 1 / 3 cup of dry white wine or Asturian Sidra ( Sparkling Cider ) .. 3 Tablespoons of fresh chopped parsley .. S & P - a light sprinkle of salt (cautions - cod tends to be salty even though it is fresh and a grind or 2 of black peppercorns).

Pre heat oven and sauté the ingredients except the fish and the wine in a skillet with olive oil and cook on low flame until tender. Then boil the tomatoes and peel.

Place all this in the vessel for the oven with fish on top and the wine and fresh parsley. Cover baking dish with foil.

BAKE until fish is opaque in centre approx 25 - 30 mins depending on one´s oven.

Serve with a white wine or Cava or Prosecco or Sidra.

Light, low cal, low fat, low sugar .. No gluten ..

I wonder if she means that she lives in the Capitol building in Madrid - presumably where she gets her 'Menu of the day'. It's quite a famous building so she may be assuming others would know of it. I may be wrong.

My photo is similar but not the same ..

However, I did do some very extensive courses in Paris at the Le Cordon Blue Culinary Academy.

It is a lovely dish and nothing fried. Grease a baking sheet and oven bake in a pre-heated oven approx 6 minutes per side, depending on one´s oven.

I also made roasted sweet potato & red pepper soup in the soup maker, with onion, celery, potato - really good. OH is having more for supper when he comes home late from his ukulele club.

Lunch Today at home is:

A renowned French dish worldwide: Entrecôte Bérnaise with a simple tri color lettuce salad with cherry tomatoes and a home made vinagrette and served with a wonderful red wine.

We are not big on sugary desserts and so, seasonal clementines and brie.

I had leftover roasted red peppers, onions, mushrooms, courgette in a small jacket potato.

Pear and stilton paté sounds quite posh 😃

The bananas have gone over-ripe (again).
Banana cake perhaps?

Today I had 2 streaky bacon rashers, well crisped up, some leftover boiled potatoes, sliced and fried (in just a film of oil), plus a few sliced mushrooms and a fried egg.

This was my ‘breakfast’ at about 1 pm!

This was my ‘breakfast’ at about 1 pm!

So did DH, except substitute the mushrooms for black pudding.
