Just type exactly what is opposite the smiley in the list near the message box.
I will type one here, (but with a space between the letters so that they don't vanish and be replaced by the smiley) - like this - [ s m i l e ] - it is smile but with a [ ] at each side
So typing [ s m i l e ] but with no spaces gives you a 
Soops Kitchen, a place of refuge, reflection and revelry.
