What to bake this week
Baileys chocolate cheesecake
Prep time: 30 minutes
Cook time: 5 minutes
Serves: 8
Ingredients
- ½ pack reduced fat digestive biscuits
- 2 packs light Philadelphia soft cheese
- 100g low fat unsalted butter
- 100ml icing sugar
- 300ml light double cream
- 25ml Baileys
- 100g grated chocolate
Method
- Melt the butter and add the crushed biscuits. Place the mixture into a greased baking tin. Leave to set for about an hour.
- Whip the soft cheese. Mix the cheese with the Baileys and icing sugar. Make sure you sieve the icing sugar to avoid lumps in the cake.
- Fold the double cream and grated chocolate into the cheese mixture. Put the mixture onto the cooled biscuit base and leave to set in the fridge for about 2 hours. Sprinkle some more grated chocolate on top of the cake when you serve.
